Chunky Chicken and Chorizo Soup.

You will need:
One large chicken breast
One large red onion - chopped
Three or four mushrooms - chopped
One tin of chopped tomatos
One carton of passata
Two garlic cloves chopped/crushed
Tin of kidney beans
Small-medium Chorizo Sausage - chopped
Smoked paprika
Two - three cubes of chicken stock
Salt and pepper

First, put your chicken breast into a pre heated oven at 200.

Next, heat your pan with a little olive oil and add your chopped onions and mushrooms. Stir and allow to cook for around five minutes until softened.

Next add your chopped chorizo and cook for five more minutes, then add your tinned tomatos, passata, chopped garlic and kidney beans.

Add two teaspoons of smoked paprika and the cubes of chicken stock and stir. Turn down the heat on the hob and allow to simmer, stirring occassionally.

Once the chicken is cooked, take out and chop up finely then add to the soup. Simmer for five more minutes, season with a little salt and pepper if desired and then serve with crusty bread.

(You can blend if you prefer your soup to be less chunky)
