What I am having for lunch.

Am trying to continue my health kick so had boring wholemeal toast for brekki. However, for lunch I had something yummier!

I roasted some leftover asparagus in the oven with mushrooms, seasoned with salt and pepper and poached two eggs. Easy peasy!! Asparagus and eggs go really well together and poached eggs are healthy and a source of protein. Asparagus is good for you too and because it has been roasted it is healthy and tastes delish!
