Last week I made these amazing muffins and wanted to share the recipe with you. They are amazing because they taste indulgent yet in reality, they aren't that naughty. You could add a few little sins in if you wanted to because even if you did they would still be better for you than making the full on naughty version.
I have never made muffins before so was a bit anxious but these are super easy, super tasty and I am most certainly going to make them again. I already have a few variation ideas rolling around in my head which I am sure I will share with you on Instagram once baked.
So, a flour free - sugar free muffin eh? Trust me they're worth making!
(To make 6 muffins)
1 and half cups of wholegrain rolled oats (porridge oats)
half cup of low fat natural or greek yoghurt
half cup of pure natural honey
2 tsp of vanilla essence
1 tsp baking powder
1 tsp Bicarbonate of soda
couple of handfuls of blueberries chopped in half
(optional) handful of crushed nuts
Turn on oven to 200 degrees.
Line your cake tray or silicone cake holders ready to go.
Pour the oats into a blender and blitz for about ten seconds.
Next, add in all of the other ingredients and blitz until smooth.
This mixture should look like cake mix; smooth, thick but runny and not too watery.
Add in your blueberries (or whatever else you want to add in)
Transfer the mixtures into the silicone cake holders or whatever you are using, filling them up to about three quarters full.
Bake in the oven for 20 minutes (to test if they are cooked put a tooth pick through the middle and if it comes out clean they are cooked!)
If you want to make more than 6 (as I will do next!) I would say do 2 and half cups of the oats, one cup of yoghurt and keep everything else the same. Go by instinct, you know when it looks right and you can taste the mixture to be sure.
